Turkey (or Vegetarian) Chili
2 cans Black beans
2 cans White beans
2 cans Small Red beans
2 cans Tomato sauce
2 cans of stewed or Italian tomatoes
1-cup salsa to taste
1 tablespoon each of Basil and Tarragon
˝ tablespoon each of ground cumin and chili powder
1 pinch of crushed red pepper
1 cup of diced carrots
4 stalks of diced celery
1 large yellow or white onion diced
2 green peppers diced
4 or more cloves of garlic minced
1-lb of ground turkey
Open cans and drain juice. Combine in large pot. Add salsa and all seasonings. Mix and begin to heat over medium burner. Let this mix blend for 30 minutes or so to absorb all of the seasonings. Be careful not to overcook the vegetables
In large fry pan, sauté vegetables to desired consistency. (I usually do each vegetable separately.) Add the cooked vegetable to the mix. Cook the ground turkey with a little oil in large fry pan. Break up the turkey into very small pieces. Add the cooked turkey to the mix.
Let the mix blend for whatever time you have or like. Be careful not to overcook the vegetables.
You can avoid the turkey for a vegetarian meal. You can also use sliced or diced turkey or chicken.
