Pete’s Simple Salmon Drizzle*

  (or was it Simple Pete’s Salmon Drizzle?)

 

INGREDIENTS

2 cups Balsalmic Vinegar

2 cups dry white wine

2 tablespoons brown sugar

2 tablespoons lemon juice

pepper

PREPARATION INSTRUCTIONS

 

 
Combine ingredients in a small saucepan and reduce by boiling until the consistency is about that of a light syrup.  Remove from heat, cool a bit and drizzle over your barbequed, poached, or baked salmon.  It’s really a simple, delicious addition to you salmon or steelhead.  It keeps for several weeks in the fridge and works great on steak as well.  Preparation time is about 2 minutes and boiling time is about 5-10 depending on how thick you want it.    

 

*Pete is a fellow fisheries biologist in Boise, Idaho and works for the Idaho Department of Fish and Game.  He is a champion for the continued existence of salmon and steelhead in the Columbia and Snake Rivers, a damned good biologist, great fisherman, connoisseur of fine foods, and a good friend.
